Authentic flavors: the autumn garden for local producce
Having said goodbye to the vibrant red and cheerful yellow of tomatoes and peppers, the bright red of radishes, the reassuring green of green beans, zucchini and cucumbers, the beautiful purple and blue shades of eggplants, it is time to turn our gaze to the autumn season, equally rich in treasures of the earth.
This is a special time of year to set up and maintain the garden, considering the falling temperatures, the incoming rains, the gradually shorter days. And, as we will see shortly, it can really be worth it. To be able to enjoy fresh and genuine vegetables, directly from the earth to the table.
Home garden, the perfect vegetables for the autumn season
Autumn is coming, and the soil is preparing itself in a completely natural way to welcome new seeds. How so? By retaining a little summer heat and at the same time keeping it moist thanks to the rains; two ideal conditions for the next crops.
But which vegetables are at their best in autumn? Here some of them:
Fennel: excellent both raw in salads and baked au gratin or steamed, it is very easy to grow and gives great satisfaction! In fact, once sown, it does not require any intervention
Cabbage, black cabbage, savoy cabbage, cauliflower: vegetables that are notoriously resistant to cold, they are rich in fiber, vitamins and minerals and lend themselves well as side dishes or to create delicious soups
Leek: with a delicate and very versatile taste, it can be used to make omelets, sautéed, flatbreads, and creamy soups
Spinach and chard: with their nutritional properties, they are a real cure-all for the body... and for the palate!
And what about pumpkin?
A special mention undoubtedly goes to the pumpkin, the undisputed queen of autumn. Sweet, nutritious and versatile, it brings color and creativity to the table: from creamy soups to soft gnocchi, to becoming a refined filling for ravioli and casoncelli.
Be careful, though: although the harvest takes place in this season, the pumpkin must be sown in spring, when temperatures range between 25 and 30 °C and the sun guarantees light for several hours of the day.
Is it too late this year? No problem: mark the date on your calendar for next spring, and you'll be ready to enjoy its fruits in the fall!
