End-of-summer recipe for a spaghetti dish
What could be more relaxing than taking advantage of the warmth of late summer evenings to dine outdoors with friends?
In this article we explain step by step how to prepare a fantastic spaghetti dish with tomatoes, courgettes, lemon and mint, all ingredients that can be easily found this season, often at 0km, directly from our garden.
To make the dish especially interesting, you can use yellow cherry tomatoes, which with their sweetness contribute to creating a dish that is truly pleasant to the palate... and to the eye!
Recipe for spaghetti, tomatoes, courgettes, lemon and mint: ingredients for 6 people
- 500 g spaghetti
- 250 g cherry tomatoes, a mixture of red and yellow
- 1 courgette
- 1 clove of garlic
- 1 unwaxed lemon
- a few mint leaves
Preparation
Cut the cherry tomatoes in half, also leaving the peel and seeds, and the courgette in cubes. Fry everything until golden in a non-stick frying pan of the right size with a drizzle of oil and the peeled and crushed garlic, and let it rest half-covered for about 30 minutes.
Bring the water to the boil, and cook the spaghetti according to the timing indicated on the package.
In the meantime, wash the lemon well and zest it, keeping it to one side.
When the pasta is ready, drain it and pour it into a pan, mixing over medium heat together with cherry tomatoes and courgettes and a little squeeze of lemon juice. Then add the lemon zest, and remove the garlic.
Before serving, garnish with a few mint leaves.
And voilà, the late summer spaghetti is served!
