Pizza muffins: ingredients for 12 muffins
For the batter:
- 500 g 00 flour
- 250 ml water
- 80 ml extra virgin olive oil
- 10 g brewer's yeast
- salt (to taste)
For the basic filling:
- 2 tablespoons tomato concentrate (or tomato puree to taste)
- chopped mozzarella
- oregano (to taste)
Method
Pour the flour into a bowl forming a well. In the center, add the crushed brewer's yeast and dissolve it with a little lukewarm water poured in gradually.
Start kneading the dough by adding the remaining water and salt, until the mixture is homogeneous and elastic.
Cover the bowl with a clean cloth and let it rise in the turned-off oven for about 3 hours, or until it doubles in size.
Take the dough and make balls the size of a walnut. Briefly coat them in extra virgin olive oil, then flatten them with your hands and line the muffin tins, pressing the dough firmly against the sides.
Add the basic ingredients (tomato puree or concentrate, mozzarella, and oregano), then close with another small layer of dough. Top with a teaspoon of tomato sauce and 1–2 pieces of mozzarella.
Alternative method: you can combine the dough pieces directly with the chosen ingredients in a bowl, mix gently and distribute the mixture in the previously buttered muffin molds.
Bake in a preheated static oven at 185 C for about 20 minutes, or until golden brown.
