Pulled pork, the perfect recipe to enjoy with friends

Among the Queens of all grilled dishes, pulled pork is an original "Made in the USA" recipe that has now crossed the American borders to conquer the hearts of grill lovers around the world.

A preparation able to elevate a cut of pork – the shoulder – which is usually neglected, and transform it into a truly succulent dish to be enjoyed with friends together with a good beer, in true BBQ style!

Let's discover the ingredients and the authentic recipe of pulled pork!

Pulled pork, the ingredients you need for the perfect recipe

This pulled pork recipe includes different steps and types of preparation.

Pulled pork

  • Approximately 3 kg of pork shoulder;
  • Mustard.

(if 3 kg seems too much, remember that when cooking, the meat shrinks. Also, any leftover pulled pork can be stored in the freezer and used for later occasions)

Pulled pork rub

  • 2 tablespoons of coarse Italian sea salt;
  • 1 tablespoon of black pepper;
  • 1 tablespoon of chili powder;
  • 1 teaspoon of ground mustard;
  • 1 tablespoon of brown sugar;
  • 1 teaspoon of garlic powder;
  • 1/2 teaspoon of oregano.

Alternatively, you can use a ready-made rub.

Pulled pork sauce

  • 3 cups of apple cider vinegar;
  • 2 cups of classic barbecue sauce;
  • 1 cup of mustard;
  • 1 cup of water (to adjust the consistency).

Coleslaw salad

  • 1/4 green cabbage
  • 1/4 purple cabbage
  • 1 carrot

For the dressing:

  • 3 tаblеѕрооnѕ оf mауоnnаіѕе;
  • 3 tablespoons of low-fat yoghurt or Greek yoghurt;
  • 1 tablespoon of brown sugar;
  • 1 tablespoon of onion powder;
  • 1 tablespoon of garlic powder;
  • 2 tablespoons of horseradish sauce;
  • Juice of half a lemon;
  • Salt and pepper to taste
  • Oil to taste

How to prepare pulled pork

9 hours of cooking... but you'll see how satisfying it is!

Here is a summary of the main steps to obtain perfect pulled pork!

  1. Remove large pieces of superficial fat with a professional kitchen knife until the surface of the meat is smooth and even;
  2. Brush the entire surface with mustard, or with a little oil, and add a nice sprinkling of rub.

Now, let's get it on the grill! Prepare the barbecue for indirect cooking on Low&Slow, possibly with the charcoal arranged in a snake. Remember that cooking pulled pork does not require excessive temperatures: the ideal temperature is between 212°F and 266°F.

Smoking in the first part of cooking is also very important: a light smoke takes about an hour; otherwise, continue for 3 hours. Choose aromatic wood carefully: cherry or apple wood is ideal.

Once the BBQ is stabilized, place the pulled pork on the grill.

  1. After 3–4 hours, check the meat: the temperature could already be around 176°F and therefore the famous "bark" should have formed, the crust, which is the best part!
  2. Then decide whether you want to use foil immediately (wrap a piece of meat in aluminum foil and continue cooking that way) or wait for the bark to get thicker.
  3. After wrapping with foil, use a pan, add broth and seal tightly with foil;
  4. Continue to cook the meat until it reaches about 198/208 degrees Celsius;
  5. When the temperature is reached, remove the pulled pork from the heat and place it on a tray;
  6. Leave it to rest and then... pull it!

Serve in a sandwich with barbecue sauce and coleslaw... and you're done!
