Christmas appetizer recipe: grana cheese baskets with prosciutto, stracciatella and puntarelle

Grana cheese baskets with prosciutto, stracciatella and puntarelle: ingredients for 8 people
300 g of grated parmesan
300 g of burrata stracciatella cheese
150 g prosciutto, cut into thin slices
150 g puntarelle
60 g pine nuts
1 garlic clove
Black pepper and pink pepper
Directions
Heat the oven to 200 °C (392 °F), and, on anon-stickbaking sheet, create discs of grated parmesan using an 8 cm diameter pastry cutter. Cook until the discs are golden on one side, then turn them with a spatula and complete the browning on the other side.
In a20cm non-stick pan, toast the pine nuts together with the garlic clove, then set aside. Clean the puntarelle, cut into thin strips and leave in water and ice to make them curl.
Fill each basket with a spoonful of stracciatella. Add a rosette of prosciutto and a few well-dried strips of puntarelle. Finish with toasted pine nuts and a grind of black and pink pepper.
To maintain the crunchiness, serve immediately.
For greater simplicity, the empty baskets can be prepared the day before and stored in an airtight container, ready to be filled before serving.
