Summer recipe 2022: spaghetti with stracciatella cheese, cherry tomatoes and basil

When it's hot, sunny and you're longing for the sea, what could be better than a super summer recipe based on typical Mediterranean flavours?

Pasta, tomato, basil and Apulian burrata stracciatella cheese: here are the few simple and genuine ingredients to make a dish which is guaranteed to delight your taste buds! Are you ready to make it in a few simple steps?

Spaghetti with stracciatella cheese, cherry tomatoes and basil: ingredients for 4 people

  • 320 g of spaghetti (or orecchiette)
  • 400 g of Datterini or San Marzano tomatoes
  • 250 g of burrata stracciatella cheese
  • fresh basil
  • extra virgin olive oil
  • 1 garlic clove
  • salt
  • pepper (optional)

Instructions

Boil the pasta water in a non-stick 24 cm saucepan. While the water is boiling, wash the tomatoes, cut them in half and sauté them in a shallow non-stick pan with a drizzle of extra-virgin olive oil, garlic and a pinch of salt. Keep aside some chopped cherry tomatoes.

Drain the pasta when it is still quite firm and add it to the pan together with 2 ladles of boiling water and a tablespoon of oil, and let it cook for about 5 minutes on high heat.

When the water is completely absorbed and the pasta reaches the desired firmness, mix in the tomatoes previously kept aside. Serve and garnish with basil leaves, fresh burrata cheese and pepper (optional): and you're ready for a super spaghetti dish to enjoy in good company!

If you prefer, you can add basil and burrata cheese in the pan and serve it directly to the table: you'll make a great impression!
