
Early summer recipe: baked paccheri stuffed with mackerel and vegetables

Baked paccheri stuffed with mackerel and vegetables: ingredients for 4 people
- 300 g paccheri pasta shells
- 200 g cleaned mackerel fillets
- 2 slices of sandwich bread
- 2 vine tomatoes
- a handful of cherry tomatoes
- 2 medium-sized zucchinis (or a red pepper)
- 1 white onion
- white wine
- Grana Padano PDO cheese (to taste)
- extra-virgin olive oil
- oregano (to taste)
- salt (to taste)
- pepper (to taste)
Directions
Fill a non-stick saucepan with plenty of salted water, and bring it to a boil. Cook the paccheri until they're al dente, then drain and let cool.
Wash the tomatoes, zucchini (or pepper), and onion, then chop them into small pieces and sauté in a non-stick pan with 2 tablespoons of extra-virgin olive oil. Simmer with a dash of white wine and 2 or 3 glasses of water, and add the previously chopped mackerel fillets. Cook for about 5 minutes, and season with salt and pepper.
In the meantime, cut the cherry tomatoes into coarse pieces and finely blend the bread with 1 tablespoon of the Grana Padano cheese. Season both with 1 tablespoon of EVO oil and 1 teaspoon of oregano. Let it rest.
Once cooled, finely chop the vegetables together with the mackerel until the mixture is smooth and uniform. Season with a drizzle of EVO oil and add in half of the bread mix. Fill each pacchero shell with 1-2 teaspoons of stuffing.
Arrange the stuffed paccheri in a lightly greased casserole or baking dish, and top with a drizzle of extra-virgin olive oil, a pinch of salt, pepper, and the remaining stuffing and breadcrumbs. Add the chopped cherry tomatoes, which add a splash of color to the dish.
Bake at 200 °C in grill or broiler mode for about 5 minutes, until a mouth-wateringly delicious golden crust forms. Serve immediately and... enjoy your meal!
