
A light post-holiday recipe: chickpea burgers

In this recipe, the chickpea burger is served in a classic patty form, topped with vegetables and condiments, and accompanied by breadsticks, providing a well-balanced meal that's rich in nutrients.
Chickpea burgers topped with vegetables and a side of breadsticks: recipe for 4 people
For the chickpea burgers:
- 400 g pre-cooked chickpeas (canned chickpeas are fine)
- 50 g breadcrumbs
- 2 potatoes
- ¼ of a garlic clove, removing the germ and finely chopped
- parsley, to taste
- chives, to taste
- black pepper, to taste
- paprika (optional)
- salt
For the toppings:
- a few lettuce leaves
- 2 vine tomatoes
- 1 white onion
- 1 avocado
Add breadsticks as a side accompaniment.
Directions
Wash and peel the potatoes, then boil them with a bit of salt or steam them until they are soft. Drain them and let them cool.
Drain the chickpeas, setting aside some of the canning aquafaba. Transfer them to a food processor and puree them, adding a little bit of the reserved aquafaba if needed.
Mash the potatoes and transfer them to a bowl. Add the pureed chickpeas, breadcrumbs, herbs, chopped garlic, and a pinch of salt, and mix until smooth and well-blended. For a zesty twist, we suggest adding paprika.
Divide the mixture into eight equal parts and shape them into patties either by using a round cookie cutter or by rolling them into balls with your hands and flattening them.
Cook the chickpea burgers in a lightly greased non-stick frying pan (28 cm/11 inch or 32 cm/12.5 inch, depending on the size of the burgers) until they are golden brown on both sides. If you prefer low-fat cooking methods, you can cook the burgers in a convection oven at 200 °C/392 °F for about 20–25 minutes, turning them halfway through cooking.
Top the burgers with lettuce leaves, and sliced tomato, onion, and avocado and serve. Diners can add their favorite condiments as they please, such as vegan mayonnaise, hummus, or a yogurt and lime sauce.
Add a few breadsticks as a side accompaniment.
